Paneer Kathi Rolls


Today’s recipe is perfect blend for picnics, food delivery and is definitely is mouth watering. The recipe that we are talking about is none other than Paneer Kathi Roll also known as Paneer Frankie is a delicious Indian wrap filled with curried Paneer. Let’s enjoy the recipe of this appetising and dainty Paneer Kathi rolls which are damn delightful and sapid.

Ingredients:

For The Roti:

1. Maida Or All Purpose Flour – 1.5 Cups
2. Wheat Flour – 1 Cup
3. Salt To Taste
4. Oil – 3 Tsp.

For Stuffing:

5. Shredded Paneer – 2 Cups
6. Cumin Seeds – 1 Tsp.
7. Finely Chopped Ginger – 1 Tbsp.
8. Finely Chopped Garlic – 1 Tbsp.
9. Chopped Green Chilli – 2
10. Few Curry Leaves
11. One Big Onion
12. Turmeric Powder – 1/4 Tsp.
13. Chilli Powder – 1 Tsp.
14. Coriander Powder – 2 Tsp.
15. Garam Masala – 1/2 Tsp.
16. Oil – 1 Tbsp.
17. Salt To Taste
18. Chopped Cilantro – 2 Tbsp.
19. Green Chutney And Hot Sauce For Spreading

Instructions (Method):

Mix all-purpose flour, wheat flour and salt. Add 2 tsp. of oil and knead it to smooth and soft dough. Knead it for about 8 to 10 minutes. Grease a bowl with the remaining oil and place the dough. Cover and let it rest for 2 hours. Make big lime size balls from the dough. Dust with flour and roll it into thin round shape like roti. Heat a griddle and add the rolled roti’s one by one and cook both the sides. Brown spots will appear on both the sides. Place it in a hot pack or wrap it with a foil. Grate Paneer. Heat a tablespoon of oil in a pan and add cumin seeds. When it splutters add ginger, garlic, green chillies and curry leaves. Sauté for a minute and add onions. Sauté until it becomes translucent. Reduce heat; add turmeric powder, chili and coriander powder, Garam masala and salt. Mix well and cook for 5 minutes or until the raw smell is gone.
Add grated Paneer, mix well and cook for 5 minutes and turn off the stove. Add chopped cilantro. Spread green chutney and hot sauce on the roti’s. Add a couple of tablespoons of Paneer stuffing. Sprinkle a pinch chaat masala (optional). Fold the bottom portion and roll it. Enjoy yummy rolls!!!!

5 Spice Fried Rice


Bored of regular vegetable fried rice? Let’s try something new which is different in taste and also will remove your hunger. Easy to make and delicious in taste, here I am telling you the recipe of 5Spice Fried Rice…..enjoy!! 

Ingredients: 

1.       2 Cups Cooked Rice (Chawal)
2.       2 Tbsp. Oil
3.       1/2 Cup Thinly Sliced Spring Onions Whites
4.       2 Tbsp. Bean Sprouts
5.       1/2 Cup Paneer (Cottage Cheese) Cubes
6.       Salt To Taste
7.       2 Tsp. Readymade Chinese 5 Spice Powder

Instructions (Method):

Heat the oil in a non-stick pan, add the spring onion whites and cook on a medium flame for 1 to 2 minutes. Then add the bean sprouts and Paneer. Mix well and cook on a high flame for 1 minute. Add the salt and 5 spice powder.  Mix well and cook on a high flame for 1 minute, while stirring continuously. Then add the cooked rice, mix well and cook on a high flame for 1 to 2 minutes, while stirring occasionally. Transfer into an oven safe bowl, cover with an aluminum foil and bake in a pre-heated oven at 200°c (400°f) for 10 minutes. Serve immediately.

Indian Gooseberry Pickle


Pickles are the preserved food by anaerobic fermentation in brine or vinegar. These are generally salty or sour in taste. Pickles are made and eaten because people enjoy the resulting flavours. Pickling may also improve the nutritional value of food by introducing B vitamins produced by bacteria. Today I am going to tell you Indian Gooseberry Pickle recipe, which is yummy, mouth-watering and tempting. 

Ingredients: 

1.       Indian Gooseberry (Amla/ Nellikai) - 1/2 Kg 
2.       Salt – 4/5 Tbsp. 
3.       Turmeric Powder - 1 Tsp.
4.       Sesame Oil - 4 Tbsp.
5.       Red Chilli Powder - 5 Tbsp.
6.       Asafoetida - 1 Tsp.
7.       Mustard Seeds - 1 Tbsp.
8.       Curry Leaves - 1 Sprig 

Instructions (Method):

Wash the gooseberries and dry them. Take the gooseberries in a glass bottle; add the salt and turmeric powder to them. Cover them for 2-3 days. Shake the bottle once or twice a day. The gooseberries thus absorb all the salt and result into soft. If you want to skip the above step and make instant Gooseberry Pickle, then boil the gooseberries with 1/2 cup of water with salt. Boil until the gooseberries become soft and then proceed. Heat oil in a pan and splutter the mustard seeds and curry leaves. Turn off the switch and then add asafoetida and red chilli powder. Add this to the soft salted gooseberries and let the pickle absorb all the spices and flavours for atleast 3 days before enjoying.

Tasty Gooseberry Pickle is ready to serve with curd rice or any other dish. This will last in the refrigerator for 4-5 months. Store it, preserve it and enjoy it…..

Date and Cashewnut Cookies


It’s the matter of only 15 minutes and the delicious cookies full of taste and nutrition will get ready. A perfect iron-rich treat to start the week ensuring optimum brain functioning and development.

Ingredients:

1. 1/2 Cup Dates (Khajur), Deseeded And Chopped 
2. 1/2 Cup Soya Flour 
3. 1/2 Cup Whole Wheat Flour (Gehun Ka Atta) 
4. 1/2 Cup Butter 
5. 4 Tbsp. Sugar 
6. 3 Tbsp. Chopped Cashewnuts (Kaju) , Lightly Toasted 
7. 1 1/2 Tbsp. Cocoa Powder 
8. 1/4 Tsp. Butter For Greasing 

 Instructions (Method):

Combine the dates and 1 cup of water in a deep pan and boil it. Lower the flames and boil or cook it for another 10 minutes till the dates are fully mashed into a puree. Cool it. Afterwards, combine the soya flour, whole wheat flour, butter and sugar in a bowl using your fingertips till the mixture resembles bread crumbs. Add the date purée, Cashewnuts and cocoa powder, mix well and knead it into semi-stiff dough. Cover the dough with a plastic film and refrigerate for 15 minutes. Roll out into a sheet of 6 mm. (¼") thickness and cut out cookies approx. 50 mm. (2") in diameter using a cookie cutter. Re-roll the scraps of dough to make more cookies and place them on a greased baking tray. Bake in a pre-heated oven at 180º c (360º f) for 25 minutes or till the cookies are crisp and golden brown in colour. Cool and store in an air-tight container.

Thus yummy and nutrition enrich cookies are ready. Cool them completely and these will get ready to eat.

Delicious Cakes

Simple Sponge Cake:

Ingredients:
1. 2 Eggs
2. 100 Gms. Amul Butter
3. 1 Cup Flour
4. 1 Tsp. Baking Powder
5. ¾ Cup Castor Sugar
6. Few Drops of Vanilla Essence

Instructions (Method):
Sift the dry ingredients- Flour and Baking Powder. Take out the butter of fridge and keep it for atleast 30 minutes till it starts melting at room temperature. Afterwards, mix the butter with sugar. Gently beat the eggs and add the sugar-butter mixture. Add dry ingredients to the egg mixture and fold in along with the vanilla essence. Pour the dough into a greased pan. Before that, preheat the oven to 180 degree centigrade and bake the cake for atleast 30 to 35 minutes. After your cake is baked allow it to get cool. After it gets proper cooled slice, serve and enjoy the yummy cake.

Chocolate Cake:

Ingredients:
1. 2 Eggs

4. 1 Tsp. Baking Powder

6. Few Drops of Vanilla Essence
7. 2 Tbsp. Drinking Chocolate Powder

Instructions (Method):
Sift the dry ingredients that are Flour, Baking Powder and Chocolate Powder. Take out the butter of fridge and keep it for atleast 30 minutes till it starts melting at room temperature. Afterwards, mix the butter with sugar. Gently beat the eggs and add the sugar-butter mixture. Add dry ingredients to the egg mixture and fold in along with the vanilla essence. Pour the dough into a greased pan. Before that, preheat the oven to 180 degree centigrade and bake the cake for atleast 30 to 35 minutes. After your cake is baked allow it to get cool. After it gets proper cooled slice, serve and enjoy the yummy cake. You can do icing to decorate the cake.

Carrot Onion Tomato Soup

Ingredients:

1. 1/2 Cup Chopped Carrots
2. 1 Onion Chopped
3. 1 Tsp. Turmeric
4. 1 Tsp. Chilli Powder
5. 1/2 Cup Chopped Tomatoes
6. 1 Tsp. Lime Juice
7. Coriander Leaves for Garnishing
8. Salt and Pepper to Taste

Recipe (Instructions):

Put oil in pressure cooker under medium heat. Add chopped onions and cook, stirring, until softened for 4 minutes. Stir in turmeric and chilli powder and then cook and stirring for 1 minute longer. Add chopped carrots and tomatoes and 4 cups of water and boil it. Close the lid and let it whistle twice. Later allow it to cool. Blend carrots, onions and tomatoes and run the paste through a strainer to discard tomato seeds. Put it in a saucepan and heat over medium flame, stirring until it boils and add water if it is too thick. Stir in lime juice. Season to taste with salt and pepper, then ladle into bowls and garnish with coriander leaves.
